In order to gain a deeper understanding of the current trends in Quanzhou's catering industry and the latest developments in its food consumption market, the city has partnered with the China Cuisine Association to prepare the "Quanzhou Catering Industry High-Quality Development Plan." This initiative aims to provide the necessary momentum for Quanzhou's bid to become a City of Gastronomy.
From November 7 to 9, a delegation led by Zhang Xiaowen, Vice President of the China Cuisine Association, conducted a three-day research mission in Quanzhou. The research was carried out through a combination of briefings, discussions, and on-site visits, engaging with local government departments, catering associations, and prominent catering enterprises. The team visited multiple districts, including Nan'an, Shishi, and Licheng, to gain a comprehensive understanding of Quanzhou's catering industry. With the China Cuisine Association's vast industry resources and cultural foundation, the research aims to outline new strategies and frameworks for the high-quality development of the local catering sector. The plan will be finalized by January 2025, contributing to a sustained recovery and growth in catering consumption, while supporting Quanzhou's aspiration to become a City of Gastronomy.

The research team held in-depth discussions with local government departments, catering associations, and leading enterprises, focusing on both macroeconomic perspectives and specific industry insights. During meetings with government officials, they were provided with an overview of the catering industry's development, including economic performance, talent development, signature products, and the integration of cultural tourism. These conversations were essential for leveraging Quanzhou's resources and laying a strong foundation for the city's catering sector over the next four years.
Zhang Xiaowen emphasized the importance of these discussions for the success of the project. He highlighted Quanzhou's strong resource base in the catering sector, its rich culinary traditions, and the unique advantages offered by its overseas Chinese community, which helps expand the city's culinary influence. In recent years, Quanzhou has seen impressive growth in its catering sector, positioning it as a leader within Fujian Province and even nationwide, signaling a bright future for high-quality development. Zhang expressed hope that the development plan would continue to support the sector's contribution to the public and further Quanzhou's ambition to become a City of Gastronomy.

In meetings with catering associations, representatives provided updates on their organizations' progress. Quanzhou's culinary heritage, shaped by the fusion of Fujian, Central China, and Maritime Silk Road cultures, offers rich potential for promoting distinctive flavors and techniques. The city is home to iconic products such as Anxi Tieguanyin tea, Yongchun vinegar, and Da Yun black chicken, and has gained both local and international recognition for its diverse offerings. Quanzhou's status as the birthplace of Minnan (Southern Fujian) cuisine makes it a vital player in the broader Chinese culinary landscape.
Taking Steps to Clarify the Path
Following the discussions, the research team visited various catering enterprises across Nan'an, Shishi, and Licheng, observing different aspects of the catering industry, including the seafood supply chain, large-scale hotel operations, and small eateries. These visits provided a firsthand experience of the diversity and layered development of Quanzhou's catering sector.
In Shishi, the team explored the Signature Dishes of Each County initiative and the "Song-Yuan Maritime Heritage Feast," which combines Minyue culture, Central Plains culture, and Maritime Silk Road influences in Quanzhou's culinary traditions. By integrating local dishes, historical elements, and regional products, this initiative is part of a broader movement to elevate Quanzhou's culinary reputation.
The team also visited Fujian Beiji Food Company in Shishi, known for its innovative approach to food supply and marketing. Zhang praised the company's market-driven model, which adapts to consumer demands and offers insights into optimizing Quanzhou's catering industry.

The research team was impressed by Quanzhou's rich variety of traditional snacks and innovative approaches such as the "Cultural Tourism + Food" model, which is opening up new opportunities for the catering industry. The research has provided essential insights into optimizing the structure, layout, and development pathways for Quanzhou's catering industry.
